This is so easy and makes the best shredded chicken for tacos, taco salads, quesadillas, and nachos!


4-8 oz boneless skinless chicken breasts
2 cups water
1 pkg fajita or taco seasoning mix
1 can diced tomatoes with green chilis

Turn crockpot to low. Mix together water and taco seasoning and pour in crockpot. Place whole chicken breasts in crockpot. Pour entire can of tomatoes over chicken. Cook for 8 hours on low or 4 hours on high. Chicken is done when it is easily shredded (most of the broth will have been soaked up). Using two forks, shred chicken and mix well. You may add additional tomatoes if desired.

I made this for my sons birthday party,but made some changes due to time and ingred I had.

I pan fried my chicken breast(which was 4 of them but they were HUMONGOUS)til about 1/2 done(and I sprinkled them with a little cumin)

then I cut em up and tossed in crock pot with:
1 c water
2 pkgs taco seasoning mix
and about 4-6 oz of Pace hot salsa(that I pureed)

cooked on low about 4 hours and it was perfection!!!

Great post Araefinn........everyone loved it......and it was fast,frugal and family friendly.

ryans_mom10-I hope that you and your family like the chicken. Only change I have made from the original recipe is that I only use 1 cup of water. 2 cups just made it too watery. I figure it is easier to add a little water later on if need be, than to have too much and it makes your tacos messy.

This would be a great way to make fajitas for a crowd. Make this chicken in the crock, then pan fry it with some veggies. Yummy.

Good Idea faerieflr!!!

I have some of this in the freezer that I am going to use up soon to make chicken tortilla soup. I have never made it before, but looking at the recipe for it, I dont see why this chicken meat wouldnt work.
