Crock Pot Chicken Parmigiana

3 bone/skinless chicken breasts(or 6 halves)
1 egg
1 tsp salt
1/4 tsp pepper
1 c dry breadcrumbs
1/2 c butter
1 eggplant, sliced
1 (10 1/2)pizza sauce
6 slices mozzarella cheese
parmesan cheese
Cut whole chicken breasts into halves.
In bowl, beat egg, salt, and pepper.
Dip chicken into egg then coat with crumbs.
In skillet saute chicken in butter.
Arrange chicken and eggplant in crock pot with eggplant on bottom.
Pour pizza sauce over chicken.
Cover and cook on low 6 to 8 hours.
Add Mozzarella cheese 15 minutes before serving.
Top with Parmesan cheese. :happy dance:
