CP Enchiladas

1 lg. can Enchilada sauce
4 chicken breasts
1 chopped onion
2 cans cream of chicken (or what ever you have on hand)
1 sm. can black olives, sliced
1 pkg. shredded taco cheese (sharp cheddar also works well)
2 doz. tortillas (corn or flour)
Cook and shred chicken. Mix cream soup, olives and onions. Cut tortillas in wedges.
Layer in crockpot:
First layer: Enchilada sauce
next: tortillas
next: soup mix
Next: chicken
Then cheese
start over and go all the way to the top of CP. End with shredded cheese (on top).
Cook 8-10 hours on low.
