THE BEST Beef Roast EVER!

2 TBSP Extra Virgin Olive oil
3 Lb. beef roast
salt and pepper
1 1/2 cups tomato sauce
2 cloves finely diced garlic (or use powder)
1 1/2 c. pearl onions
1 c. frozen carrot slices
3/4 c. red wine (optional!!!! and if you don't like the taste of the wine alone, don't add it to the recipe!!!!)
if you don't use the red wine, use tomato juice.
Heat olive oil in frying pan and season Roast with salt and pepper. Brown roast on all sides.
Spray slow cooker with non-stick spray (or use a liner). Add pearl onions and carrots into the slow cooker. Put browned roast on top. In separate bowl combine wine (or juice), garlic and tomato sauce. pour on top of roast and cook on low 8-10 hours.
