My Dh needs a main dish for a pot luck next week and there are so many great ideas on this site...which are your favorites and will feed a large group on a budget?

Thanks!

This one is really easy and not to expensive. My husband and brother in law loved it.

Pulled-Pork Sandwiches
5 lbs pork roast butt
Salt and pepper
1 14ounce can of beef broth
1/4 cup brewed coffee
Bbq sauce
Sandwich buns

1. Cut roast in half. Rub each half with salt and pepper and place in the slow cooker. Pour beef broth and coffee over the meat.
2. Turn the slow cooker to low and cover. Cook for 6 to 8 hours, or until the roast is fork tender.
3. Carefully remove the roast to a cutting board. Pull the meat off of the bone with a fork. You may also chop the meat with a knife if you like it really fine.
4. Serve with your favorite barbeque sauce.

Sloppy joes-check the grocery store for hamburger on sale, store brand buns, and than the fixings for however you make your sloppy joes. You could make them the night before and than all dh has to do is plug it in when he gets to work.
Chili-Again sales on burger, dried beans (cheap way to go), fix up the chili. Send him to work with some saltine cracker, chopped onions, shredded cheese.
Soup-great food if it is cold up in your area. Endless possibilties.

here's some ideas of things I used to make dh when he worked in a factory(and they were constantly doing food things)

I made crockpot full of meatballs and sent in buns and bag of shredded mozzarella cheese for subs(guys like hands on foods)
batch of baked ziti and meatballs(you could just do a meat sauce even(layered in crock w/cheese)
western beans (or cowboy beans)(the mix of beans bbq sauce and hamburger)
you could also do the crock pot cheeseburgers(recipe is already posted)
you could also do a pot full of chicken wings

M2M... How do you do the meatballs in the crockpot. Can it possibly be as easy as putting the balls of meat in the crockpot? How long? TIA

I do meatballs in the crockpot all the time. I buy the pre-made frozen ones at Sam's and toss into the crockpot frozen, add sauce. You can do a pasta sauce, bbq or I like the combo of 1 jar chili sauce mixed with 1 cup grape jelly. Sounds weird but is really tasty. Cook on high 3-4 hours or on low all day.

Oh, and I just thought of two recipes that would feed a crowd and be yummy:

Buffalo Chicken Wing Soup in the crockpot

4.5 cups milk
3 cans condensed cream of chicken soup
3 cups shredded cooked chicken
1/4 cup hot sauce
1 cup sour cream

Combine all ingredient in crock pot (do not dilute soup). Cover and cook on low for 4-5 hours.

If you like a thinner soup, add more milk. You can start this and adjust it as you go along.

Meatball Stew

~3 medium potatoes, peeled and cut in 0.5 inch cubes

~1 package (16 oz) fresh baby carrots, quartered

~1 large onion, chopped

~3 celery ribs, sliced

~1 package (12 oz) frozen cooked meatballs

~1 can (10.75 oz) condensed tomato soup, undiluted

~1 can (10.5 oz) beef gravy

~1 cup water

~1 envelope onion soup mix

~2 tsp beef bouillon granules

Place first five ingredients in crockpot. In a bowl, combine remaining ingredients and pour over meatball mixture.

Cover and cook on low 9-10 hours, until veggies are crisp tender.

Here's what I do:

~used three cans sliced potatoes

~used two cans sliced carrots

~tossed in some frozen corn (dh's favorite)

~skipped the onion and celery

~used the frozen meatballs I buy in bulk at Sam's

~skipped the bouillon granules and added onion powder and pepper to liquid ingredients in bowl before pouring over meatballs.

This was my suggestion, too. I also add a tablespoon of cocoa.

What happenes if I make my own meatballs? Would they stick to eachother? Would i have to "pre" cook it before i put it in the CP to avoid them from sticking? I normally make the meatballs myself. Thanks!
