Hi everybody!
anybody have any good HEALTHY CROCKPOT RECIPES.
I will be buying a crockpot later today, I am so exited, like a kid with a new toy!
I can't wait to use it.

Okay... You ladies mean to tell me that no one knows of a healthy crockpot meal?? I've been checking this forum to see if anyone responds, becuase im interested in making a healthy meal my self. I hope some one has a healthy receipe to share with us. Thanks

their are some great soup and stew recipes posted.....and also crock pot is a great way to make chicken cacciatore!!!

I think you can revamp any recipe to make it healthier. Use lower fat cream soups (I make my own, pm me if you want the recipe, it's ALOT cheaper), use chicken breasts instead of whole w/ skin. Use Fat Free evap. milk, etc. Here's one I use alot:

chicken breast (1 use 4-5 for 4 people, you would probably only use two for you and child)
1 can cream chicken soup
salt & Pepper as needed

put chicken in crock (I have put in in frozen b4), season to taste, at this point i've also added garlic powder, onion powder, mix soup w/ can of water or milk (milk will be richer). Cook on high for about 4-5 hours. If it starts to burn around the edges turn it to low. I serve this over rice. Some of the ladies add a package of onion soup mix, that's too oniony for me. You can do the same w/ pork chops.

I've also used an envelope of spagetti sauce and sprinkled it over a cut up chicken (skin removed) added chopped onions & bell peppers. Add about 1 cup of water to make a kind of sauce as it cooks down. It's a quick cheap way of making italian chicken. I serve it over rice also. I think I'll make this for supper tonite!!! I am sooo sick of turkey & ham

I would be interested in crockpot meals that don't have cream of X soup in them.

Try the pineapple chicken recipe in the forum - no added fat and absolutely delicious!

My DH saw some of the crockpot recipes on here & couldn't believe all the "creamy" recipes with cream of something soup, bricks of cream cheese, etc. in them. He's urging me to make up a fake recipe involving heavy creamy something and bacon and posting it as a real recipe.

Here's a favorite at my house:

I use all natural beef roast from Nature's Promise...grass fed cattle/no hormones etc.

2 1/2 - 31/2 beef roast
1 onion, chopped
2 tbl. canola oil
1/2 cup chopped celery
2 tbl. vinegar
2 tsp. lemon juice
1 cup ketchup
1 1/2 tbl. worcestershire sauce
1/2 cup brown sugar
1/2 cup red wine

Combine all ingredients except roast. Place roast in slow cooker. Pour ingredients over roast. Cook on high 6 hours.

these are a couple pf my favorites, I tend to stay away from cream soups

Keep in mind that I have a large crock pot, so you may need to reduce the size if you have a small one

chicken cattiatore: skinless chicken breasts, legs or thighs (skin makes it too greasy) it tastes good to brown them first but you don't have to, chopped veggies like zucchini, bell pepper, mushrooms, jar of your favorite pasta sauce, 1/2 cup red wine (optional)....combine together in CP, turn on high, in about 3 hours it's done. Serve over pasta, we use wheat pasta to be healthier, with parm cheese.

italian meatloaf: package of extra lean or lean ground turkey-about a pound, tube of country sausage-you could use the reduced fat kind, we like the hot kind, one egg, a couple of handfuls of oatmeal or chopped bread, 1/4c pasta sauce....combine together to make a loaf, put in CP, pour 1/2c pasta sauce over the top, turn on high, in about 2.5 hours it's done. I serve with a veggie and mashed potatoes.

chicken tortilla soup: 48 oz chicken broth, shredded chicken (I like to use leftover from making a whole chicken) or brown some chicken breasts in a skillet and chop, 1 can diced tomatoes and chiles, 1 can chile beans or black beans, 1 can hominy or corn (I prefer the taste of hominy, like fresh tortillas), 1 packet taco seasoning, extra chili powder, cumin and salt to taste (you can use a second packet of taco seasoing, but it really increases the sodium content)....put it all in CP, turn on low for all day or high for about 4 hours. You can either use tortilla chips or cut up some corn tortillas in strips, spray with pam and bake until crispy. Serve with tortilla crisps, light sour cream, shredded cheese, avocado.

beef stew: get a packet of beef stew seasoning and follow the directions, stew meat, carrots, celery, onion, 1/2c red wine (optional).....brown the meat and onion, add to CP with veggies, water (read the packet for amount) and red wine (makes it taste better).....turn it on high and it's done in about 3 hours. Serve with crusty bread and salad.

Well, I got my crockpot!!
I haven't use it yet, cause my son has been visiting w/his dad, so it's just me at home.
I will be cooking something in it this wkend for monday/tuesday meals.
I can't wait!!!
I will keep u ladys updated on how it turns out!!
ALL THE RECIPES SOUND SOOO GOOD, I'VE BEEN PRINTING THEM OUT!
I CAN'T DECIDE WHAT TO COOK 1ST...
