1 4lb pork loin roast
1 1/2 tsp caraway seeds
salt and pepper to taste
2 c sauerkraut w/liquid (or you can rinse and squeeze...its up to you!!depends on how much of the salt/soury taste ya like

)
1/2 bottle of a dark beer
1 granny smith apple quartered(remove seeds but ya dont have to peel)
2 Tbs brown sugar
Cut pork loin to fit in the crock if ya have to.
Sprinkle w/caraway seeds, and salt and pepper.
Toss kraut w/brown sugar and pour over the roast.
Pour 1/2 bottle over beer over top.
Cook on High for 1 hour, then cook on Low for 5 to 6 hours.
(add the apple after 3-4 hours of cookin...ya dont want to add it early or it cooks to mush

....we dont eat the apple but it really adds to it.)
we like this w/mashed potatoes and veggies!
