this is gonna be good for about a week in the fridge...maybe a little longer.Real or even jarred will eventually MOLD in the fridge.

Areafinn....homemade is good also in the applesauce pancakes

I like a mix of fuji,golden deliscious and granny smith......

you wanna pick em just like you do for a pie....if you wanna puree it down and go for a store bought texture go for a softer apple(fuji)...you want it chunkier go for the firmer(like granny smith)like I said I like mine to be like apple pie filling text so I go for the above combo.

also 3 decent sized apples usually is about 1 pound

Red Delicious are not good for applesauce. Try macintosh (best, IMO), jonathan, jonagold, Ida Red, and that one I can't ever remember!

You can freeze it VERY well for a year or so. I put it in those square freezer containers - opaque plastic ones - from the grocer.

You can freeze it! I have a friend that uses her old yogurt cups. I usually just use little plastic baggies if I'm not canning it. In my area yogurt cups are no longer being made with resealable lids.
