I made a crockpot recipe someone posted with salsa:

4-6 chicken breasts
1 can black beans
1 can corn
1 cup salsa
8 oz cream cheese.

Cook 7 hours, stir in cream cheese for the last hour. I didn't use the cream cheese though. I shredded the chicken and we had it in burritos.

I make something similiar to this, but you add chili powder & lime juice instead of the cream cheese. SOOOOOOOOOOo delicious - great in tacos or as nachos, but we prefer it over yellow rice topped with sour cream &/or cheddar cheese.

This is similar to something I make in the oven - I just coat the chicken with taco seasoning and then top with the other ingredients and sub the salsa for a can of rotel tomatoes. This sounds heavenly though especially with the cream cheese - I think we will be having this very soon.

I made this today and it came out great. The chicken shredded so easily. Mine wasn't too spicy - needed a little more kick but I attribute that to the salsa I used not the recipe. After we had this for dinner I added the spanish rice and some extra beans in the fridge - figured they would go well and one less container in the fridge.
