Crock Pot Lemon Herb Chicken Cordon Bleu

½ c unseasoned bread crumbs
1 Tbs parsley leaves, minced
1 Tbs oregano leaves, minced
1 Tbs lemon zest, minced
4 large chicken breasts,butterflied
salt and pepper,to taste
4 slices Swiss cheese
4 slices ham or bacon
½ c flour
1 Tbs paprika
2 eggs, beaten w/2 Tbs water
2 Tbs olive oil
Mix bread crumbs, parsley, oregano, and lemon zest,set aside.
Season chicken on both sides with salt an pepper.
On 1/2 the chicken breast,add a slice of cheese and a slice of ham.
Fold the other half over and press down lightly.(Secure w/toothpicks)
Mix flour and paprika in a bowl.
Coat each side of the stuffed chicken breast with flour and shake off excess.
Dip into the egg wash,then press into bread crumb mix.
Repeat w/rest of the chicken breasts.
Heat the oil in a large skillet over med-high heat,then lightly brown chicken on both sides.
Place into the Crock Pot and cook on High for 2 ½-3 hours or on Low for 4-5 hours.
For some reason we love green beans w/this!!(and usually have mashed potatoes or roasted red potatoes)
