This recipe is fresh from my girlfriend who loves to cook like I do!!!(the same one who sent me the "new iced coffee"recipe that is soo good)

anyway...she knows me so I too look forward to making this!!

8 potatoes, cut into 1/4-in slices,or cubed
2 celery ribs, chopped
1 large onion, chopped
1 c water
2/3 c cider vinegar
1/3 c sugar
2 Tbs quick-cooking tapioca
1 tsp salt
3/4 tsp celery seed
1/4 tsp pepper
6 bacon strips, cooked and crumbled
handful of fresh minced parsley(opt)


Mix potatoes, celery and onion.

Mix water, vinegar, sugar, tapioca, salt, celery seed and pepper.
Pour over potatos,stir gently to coat.

Cover and cook on high for 4-5 hours or til potatoes are tender.

Just before serving, sprinkle with bacon and parsley.
