during the week, I just use a Jiffy mix.. they are only .29 a box.. but I like to use this one when I make chili...

1 c Flour
1 c Cornmeal
3 ts Baking powder
1/2 ts Salt
1 ea Egg
1 c Milk
1/4 c Melted crisco

Mix to-gether flour,cornmeal,baking powder and salt in a large bowl. Beat the egg and add the milk & shortening. Add to the dry ingredients, stirring just enough just to get the batter moist. Pour the batter into a greased 8 inch square pan and bake for about 30 minutes at 375.

You can also add different spices to it, if you want to use it for other things. I have added chili powder to mine when I make chili...but the kids don't really like, but I do..
