I was looking for a hot fudge recipe, and this is what I found. I used baking chocolate and half&half instead. I didn't measure, just geussed as I went along. It was awesome, and didn't turn hard and chewy when I put it on the icecream. I also did not use a double boiler. Just cooked very low, and watched it carefully. From Recipezaar


Chocolate Sauce or Frosting
Recipe #68358 | 15 min | 15 min prep | add private note

Ingredients
1/2 cup heavy cream
3 tablespoons unsalted butter
1/2 cup granulated sugar
1 pinch salt
1/2 cup natural cocoa powder, sifted
Directions
1In a double boiler or heavy saucepan, melt the butter in the cream, heating until just warm to the touch.
2Stir in sugar and salt until dissolved.
3Mix in cocoa powder until well blended.
4Heat mixture over low heat, stirring continuously until shiny and smooth and hot, but not bubbling.
5For sauce, serve hot or warm.
6For frosting, refrigerate until thick enough to spread.
7May be reheated.
