BUTTER PECAN PUDDING CAKE

1 pkg. (2-layer size) butter pecan flavor cake mix
1 pkg. (4 serving size) vanilla instant pudding
4 eggs
1 c. water
1/4 c. oil

Combine all ingredients in large bowl. Blend; beat at medium speed of mixer for 4 minutes. Pour into greased and floured bundt pan. Bake at 350 degrees for 45 to 50 minutes or until cake tester inserted comes out clean. Cool in pan 10 minutes. Remove from pan and finish cooling on rack.

FROSTING:

make 1 pkg. (4 serving size) butter pecan instant pudding (or vanilla flavor) as directed on package.
Spread on top and sides of cake. Sprinkle with 1/3 cup chopped pecans.***


***I actually take 1 pkg of pudding, 1 cup milk and mix together till blended. Then I fold in a small carton of cool whip and sometimes 4 oz of cream cheese to make my icing. Then sprinkle with chopped pecans.
