1 c. AP flour
1 c. rolled oats (I used quick-cooking and it turned out fine.)
1/2 c. butter, softened
1/3 c. light brown sugar, firmly packed (I use dark w/ everything, and it was fine.)
1/4 tsp. baking powder
1/8 tsp. salt
3/4 c. strawberry jam/ spread/ preserves

Preheat oven to 375.

In a large bowl, mix everything together but the jam.

Measure out 2 c. of this mixture. Leave the rest in the bowl and set aside.

Take the 2 c. of the mixture and press it into the bottom of an 8 in. square pan, coated w/ cooking spray. Using a large spoon, distribute jam on top of the mixture in the pan. Spread it evenly all over. (I used the squeeze-bottle spread for this and it made this part of the process a lot quicker.)

Take the remaining mixture and spread it over the jam. Press down lightly.

Bake 25 min.

Remove the pan from the oven and allow to cool for at least 15 min. before cutting into bars.

*I made these this a.m. for breakfast and they are very delicious! I think next time I'll try adding mini chocolate chips to the jam. It'd also be good w/ raspberry jam and white chocolate chips, peach preserves and cinnamon, apple butter and pecans...anything goes! I can't wait to make these for the next pot luck I go to!
