I made these last week, and DH & Quentin liked them so much, they wanted me to make them again today.
Ooey Gooey Chewy Cookie Bars
from Cherry Cheesecake Murder by Joanne Fluke
For the crust:
1/2 c. granulated sugar
3/4 c. flour
1/3 c. unsweetened cocoa (NOT Dutch process)
1/4 t. salt
1/4 c. melted butter (1/2 stick)
For the filling:
2 c. milk chocolate chips (I used semi-sweet because I like them better)
3 c. mini marshmallows (pack them down into the measuring cup)
1.5 c. sweetened coconut (packed down when measuring)
1 c. chopped nuts (I've used pecans and almonds)
1 can sweetened condensed milk (14 oz.) -- nonfat will work
1. Preheat oven to 350 degrees, and spray a 9x13 pan with cooking spray.
2. For the crust: Mix the sugar, flour, cocoa, and salt together in a medium sized bowl. Drizzle melted butter over the top, and mix with a fork or pastry blender until mixture resembles small beads. Dump the mixture into prepared pan, shaking the pan to evenly distribute. Press it down evenly in the bottom with a metal spatula (I used my hands).
3. Sprinkle chocolate chips evenly over crust. Sprinkle marshmallows over that. Sprinkle coconut on next, followed by chopped nuts. Press everything down again. Pour sweetened condensed milk evenly over the top.
4. Bake in preheated oven for 25-30 minutes, or until nicely browned on top. Let cool on a wire rack, and then cut into squares.
