This recipe is awesome! My dh LOVES peanutbutter, and he quickly became addicted to these cookies. I like that it is a small batch of cookies . . .

My 1st time making these, I used the exact ingredients - and they were very good.

My 2nd time making them, I used 1/2 cup brown sugar, and 1/4 (probably a little more than 1/4th -started eyeballing it) of white sugar, the 1 cup pb (a mix of crunchy & smooth), 1 egg & then a splash of vanilla. After I placed them on the cookie sheet I added a bit of cinnamon to each one and then did the pb forking thing - and voila - these were even better (at least to my dh & me & my dd - haha).

WOW! THANK YOU, THANK YOU , THANK YOU! My girls LOVE cookies, but DD2 can't have flour anymore and we're still "learning" when it comes to making things for her with Celiac disease! This will be a DEFINATE help for me. I can't wait to try it- I just may have to do it today! I've got everything for it!

I used 1 cup splenda. Next time I am going to try 3/4 cup, and see what happens. It is all your sweetness preference. Go ahead and try the 1 cup first and then alter it if you need too.
