1 cup peanut butter
1 cup white sugar
1 egg

Preheat oven to 350.
Mix ingr. and drop by teaspoonfuls on cookie sheet. Bake for 8 minutes. Let cool.

***********
Recipe doesn't make very many, so you could double recipe or just make 1 batch as an after school snack.

Have you tried making these with Splenda instead of sugar?

I got some Peanut butter in my Angel Food and it is a no name brand. I use Jiffy for sandwiches and the such so I needed some recipes to use this peanut butter in. This one will be fantastic!!! I am making these tonight.

I made a recipe like this once and added Rice Crispies to it - I think a cup. My recipe called for chopped nuts, I didn't have any so I decided to try that - they are DH's favorite now

I have been making these for a while. If you dip them in melted choc. chips on half the cookie and roll them in chopped nuts of any kind. It is terrific that way too.

I've been using this recipe for a long time too, just becuase it is so cheap and I almost always have the ingredients on hand. Now, if I stray and make a "real" PB cookie, my family freaks out. I love these because they are the perfect combination of chewy and crumbly at the same time!

Can you tell me how much Splenda you did use? and how much you think you'll cut it down for next time?

These would be a GOOOOOOOOOOOOD diabetic friendly treat with fake sweetener!
