Wave Carrot Bundt Cake

2 c flour
2 tsp baking soda
3 tsp cinnamon
1 tsp nutmeg
1 1/2 tsp salt
1 1/3 c vegetable oil
2 c white sugar
4 eggs
2 tsp vanilla
1 c chopped pecans
1 c drained crushed pineapple(opt)
3 (4oz)jars carrot baby food
1/2 c grated carrot
1 c flaked coconut

Preheat oven to 350

Grease and flour a 10 inch Bundt pan.

Sift together the flour, baking soda, cinnamon and salt. Set aside.
Beat the oil and sugar until smooth. Beat in the eggs one at a time,stir in the vanilla. Beat in the flour mixture. Stir in chopped pecans, Baby food carrots, pineapple,grated carrots and coconut. Pour batter into prepared pan.

Bake in the preheated oven for 50 to 60 min.Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

You can frost if desired(I like to make the basic cream cheese only heat slightly and drizzle)

1 (8oz)cream cheese ,soft
1 c white sugar
1/8 tsp salt
1tsp vanilla
1 1/2 c heavy whipping cream

Beat whipping cream until stiff peaks form; set aside.

In bowl comb cream cheese, sugar, salt and vanilla. Beat until smooth, then fold in whipped cream.

to keep it really fast and simple buy a tub of cream cheese frosting...heat a few sec in micro and drizzle over cake also.
