I bought molasses today for a chicken recipe and I saw this cookie recipe on the back. So I tried it. Very good! Tastes like chewy ginger snap cookies but you need to undercook a little or else they'll be too crispy.
Ingredients:- 1 cup white sugar (I also added 2 tbp of brown sugar)
- Extra sugar to roll cookies in
- 3/4 cup softened butter, shortening or margarine (I used butter)
- 1/4 cup molasses
- 1 egg
- 2 cups flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp ginger (I used ground ginger)
- 1/4 tsp cloves (I used ground cloves)
Directions:- In a large bowl, combine sugar, butter, molasses and egg. Blend well.
- Stir in remaining ingredients and blend well.
- Chill dough for easier handling (I chilled mine about 10 minutes).
- Lightly grease (not oil) cookie sheet.
- Heat oven to 375 degrees.
- Shape dough into 1-inch balls.
- Roll balls in sugar.
- Place 2 inches apart on cookie sheet.
- Bake 10-12 minutes or until edges are set (I cooked mine for 9 minutes so that they would be chewy and not crispy)
- Cool 1-2 minutes before removing from cookie sheet.
Makes about 15-17 cookies.
