Rootbeer Picnic Cake

Cake:
1 1/4 c flour
1/2 tsp baking soda
Pinch salt
1 c regular root beer
3/4 c packed light brown sugar
1/2 c unsalted butter, softened
2 large eggs
2 tsp vanilla

Frosting:
6 Tbs root beer
1 1/4 c powdered sugar
1/4 c unsalted butter, softened
1/2 tsp vanilla

Heat oven to 350
Grease an 8-inch springform pan.


For cake:
Sift flour, baking soda and salt; set aside.
Boil 1 cup root beer til it is reduced to 1/2 cup, about 5 minutes. Cool.

Beat brown sugar and butter on high speed until light and fluffy, about 2 minutes.

Add eggs, one at a time, mixing well after each addition.

Now add reduced root beer and vanilla.

Mix just to combine. Fold in the dry ingredients with spatula.

Bake 45 to 50 minutes(test w/toothpick)Cool 5 minutes. Poke holes all over top with a toothpick. Brush with 3 tablespoons of the root beer. Remove the sides from the pan and cool cake completely.

Frosting:
mix remaining 3 tablespoons root beer, confectioners' sugar, butter and vanilla in a small bowl _makes a thin frosting. Spread over top of cooled cake(let drip down the sides)

My son has started asking to help cook, I think this would be a great cake for him to try. He LOVES rootbeer. Thanks for all your great recipes!!

Glad to hear I am promoting "cooking with kids"........I think that's GREAT!!!!
My dd is only 5 but loves to help...she gave my mom a lecture the other day on how to make french toast... and was especially adamant(sp?)about the "how to add love to your recipes"part
