Apple Enchiladas

another great way to use up tortillas.......

1 can apple pie filling
6 (8in) flour tortillas
1 tsp cinnamon
1/2 c butter
1/2 c sugar
1/2 c brown sugar
1/2 c water

Preheat oven to 350
Grease 2 qt baking dish.

Spoon heaping 1/4 c pie filling down center of each tortilla.

Sprinkle w/cinnamon,roll up,place seam side down in prepared dish.

Over medium heat, combine butter,sugar, brown sugar and water. Bring to a boil, stir constantly-reduce heat and simmer 3 minutes.
Pour sauce over enchiladas and let stand 30 minutes.

Bake 20 min,til golden.

I like to make my own pie filling in the fall.............
and I also usually add nutmeg also if using canned filling.

This stays great up to 2-3 days in fridge

I have always called these empanadas. I prefer to make the dough much better tasting. Besides who ever has leftover tortillas. never knew such a thing existed.
