Sprinkled Ice Cream Sandwiches

My DH is an ice-cream sandwhich junkie!! He'll appreciate this one.

My weekend got a bit hectic so I didn't get a chance to try them yet but I'm pretty hopeful I'll find time to try them out since we have a long weekend coming up!

I'm just still trying to think of the best cookie to use for the outside...I feel like it needs to be pretty soft or these will be messy to eat. Any ideas for what to use? I'm leaning toward slice and bake right now, and just make each cookie small (probably better to discourage me from eating too much!)

I finally got a chance to make them! I used my BIL's bday as my deadline date. He really likes brownies so I decided to use that for the outside and then I made some with slice and bake cookies too. I think the brownies worked best since they were easier to bite in to.
