For buttermilk, I always use some fresh lemon juice (tablespoon) in regular milk to make 1 cup...and let it stand a few minutes. You can also substitute plain yogurt. There is also powdered buttermilk, which is great!

I've never had to substitute an egg...I know you can substitue meringue powder for egg whites but for a whole egg? Not sure what I would do!
