1/2 c butter or margarine
1/4 c whipping cream
1-1/4 c sugar
3 eggs
2-1/2 c all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 c (2 medium) peeled, cored and coarsely chopped tart cooking apples
2 c fresh or frozen blueberries
Heat oven to 350. In 1-quart saucepan combine butter and cream. Cook over low heat, stirring occasionally, until butter melts (7-8 minutes); and set aside. In large mixer bowl combine sugar and eggs. Beat at medium speed, scraping bowl often, until well mixed (1 to 2 minutes). Add butter mixture, flour, baking powder and salt. Continue beating, scraping bowl often, until smooth (1-2 minutes). By hand, stir in apples and blueberries. Spread into greased and floured 13x9 inch baking pan. Bake for 45-55 minutes or until wooden pick inserted in center comes out clean.
Note:
-- I usually use frozen blueberries and Granny Smith apples. Just my personal preference.
--This makes a great breakfast on-the-go.
-- If you do use frozen blueberries, don't be freaked when the batter turns purple. It'll be okay.
-- You could probably make muffin-like cupcakes with this. I'm not sure what the time conversion would be.
