Peanut Butter Cup Pie that is SOOOOOO good! I googled PB Cup pie but couldn't find any that sounded right, so I just decided to wing it. I licked the spoon and had to force myself to actually put the filling into the shell, as opposed to just spooning it into a bowl!

Mouthwatering Peanut Butter Cup Pie
Graham cracker crust (I used chocolate b'c I had it on hand)
8 oz cream cheese, softened
1 c. chunky peanut butter (or creamy if you want)
1/2 c. sugar
2 tsp vanilla
1 cup cool whip, thawed & divided (into 1/3c & 2/3 c) (save leftover for top of pie)
3-5 Peanut Butter cups, cut into 8ths (pie cut is easiest)
Extra PB cups for top of pie

Cream together peanut butter, cream cheese, sugar and vanilla. Fold in 1/3 c. cool whip to loosen. Fold in pb cups. Fold in 2/3 c. cool whip. Spoon into crust & smooth over. Top with cool whip and extra (pie cut) pb cup pieces. Let firm in fridge.

Next time I make it, I'll add chocolate in somewhere. But I didn't have any chocolate on hand. I can't wait to eat it - gotta wait til it firms up a little in the fridge...

Make sure not to eat too much at once - this baby is RICH! I was thinking that the next time I make it, I might split the filling into two pies and freeze one. I cut myself a piece and couldn't even finish it, it was that rich. YUM!
