I freeze bananas all the time. Just wait until they are pretty ripe, take the skins off and throw in a bag in the freezer. I use them to cook with and for smoothies, shakes, etc.

I leave the skins on mine- just toss in freezer when they are soft and no one wants to eat them.

Should the skins come off?? does it make a difference??

I used to for a very long time leave the banana's in the skins and toss them into the freezer.I have found an easier way-here it is-

I take the skins off,put a piece of plastic on a cookie sheet, cut each banana into 5 slices(rounds).put them on the plastic on a cookies sheet and toss them into the freezer until frozen and then add them to a ziplock bag. This way if I was banana bread I know that 5 pieces is one banana and I can add that to a bowl to thaw and mash them or if I am making smooties I take 5 pieces for 1 smoothie.Leaving them frozen for smooties.

I found leaving them in the peel was a pain to peel the banana frozen and if you let it thaw they got way to mushy for me to mess with them.So this is just easier and more convient for us.

I usually leave my skins on but after reading this post I think I'll do what Ryan's mom suggested. Thanks!

Also, you might want to check out Allrecipes.com. They have a really good banana cake recipe that is much lighter than banana bread. It's in a 9x13 cake pan and you can serve it with or without cream cheese icing. I think it's really good and a nice break from banana bread.

I mash them and add a squirt of lemon juice to keep them from turning brown (Fruit Fresh will work as well), and freeze them in a container or bag w/ just the amt I need for banana bread or cake.
