I got this one from a Rachael Ray cookbook, I haven't made it yet, but it sounds really good!! Let me know how it turns out if you try it.
Easy Apple and Cinnamon Cake and Ice Cream
1 box yellow cake mix for a single layer cake, such as Jiffy
2 Tbl softened butter
1 macintosh apple, diced
1 tsp ground cinnamon
1/4 cup sugar
1 pint butter pecan or rum raisin ice cream
Preheat oven to directions on box.
Mix cake mix according to directions on box. Butter a 9"by 9" square cake pan. Arrange diced apple on top of the cake and sprinkle liberally w/the cinnamon and sugar. Bake 20 to 25 minutes. Serve warm cake squares w/butter pecan or rum raisin ice cream.
