I am a HUGE fan of peppermint ice cream. In fact, I bought 15 containers of it last year, and stocked up my freezer!!

Here's an easy recipe on how to make your own - using peppermint extract:
Everyday Cook Recipes - Peppermint Ice Cream Recipe using bought ice cream.

Here's a more "homemade" version using NO peppermint extract: (Comes out light pink!)
http://food.cookinglight.com/cooking...pe_id=47 2400

There are tons of recipes out there for peppermint ice cream - some that require the use of an ice cream maker/machine, some that don't. Some that call for eggs in the recipe, some that just use store-bought ice cream as the base ingrediant. I don't have an ice cream maker/machine, so neither of the above recipes requires one.

I plan to try each of the recipes above to see which I like better!!

Enjoy!!

ME TOO!!!! I can't wait for the Christmas season every year when the peppermint ice cream magically appears in the groceries!! If you try them both, let us know which one you liked best.

Just wanted to add a tip I learned...

After crushing up the candy canes, or peppermint candies, soak them in a bit of milk, covered, in the fridge overnight. The candy pieces will "melt" a bit, turning the milk pink-ish, and there won't be any razor sharp bits!! I didn't do this, and some of the candy pieces came out like shards of glass!! OUCH!!
