I got a PM asking for my cashew brittle recipe that I posted last Christmas. Here it is for anyone who wants it!

Cashew Brittle

NOTE: I use a glass mixing bowl with a pour spout & handle - it is the "batter bowl" from Pampered Chef & is ideal for this recipe.

In a glass bowl, mix 1 9.5 oz can or 2 cups of cashews (bits and pieces), 1 cup sugar, and 1/2 cup light corn syrup.

Nuke uncovered on HI until light brown, 6-8 minutes. Stir it halfway through.

Prep a cookie sheet by spraying it with PAM.

Remove mixture from microwave - it's HOT! Stir in 1 teaspoon butter, and 1 teaspoon vanilla. Nuke for 1.5 - 2 minutes more. Tell everyone to get the hell out of the kitchen as you'll have to move fast for the next step. Remove mixture from microwave.

Fast - Add 1 teaspoon baking soda - stir quickly - should get light and foamy. Carefully & immediately pour onto baking sheet & spread quickly w/ a spoon or spatula. Cool 30 minutes & break. Stores for 2 weeks in tins.

Guys this stuff is soooo easy and awesome! I highly recommend it Yum Yum!!

I have also made it with cocktail peanuts and it's great that way too.

That sounds quick & easy--compared to how my grandparents made nut brittles standing over the pot, stirring, waiting on the temp to come up! Thanks for the recipe, I know my mom & aunt will love it!

OMIGOD! I can't believe I didn't put in the amount of baking soda! I have to double-check that at home & I'll update the original post. Man - I re-read that and everything!

You might as well go on and post all your sweet recipes. LOL. Just kidding,that would probably be a lot of work.
I know a couple of years ago I saved some great recipes from you, but I lost them when I changed computers. :-(

I make this every yr....except we use peanuts because we didnt care for the cashews in it you add 1tsp of bs ......

I used a microwave bowl but after 3 batches it melted on me....lol....so I need to see what I will use this yr.....just be REALLY CAREFUL IT IS SOOOO HOT....AND REALLY WORK QUICK....I DO MEAN QUICK....LOL.....

It's 1 teaspoon baking soda - I edited the original recipe so it's correct.

TracyB - that's why I use that glass bowl for this. It's heavier, but it holds up. Melamine plastic bowls tend to burn/break in the microwave and other microwaveable plastics don't seem to hold up to the heat this recipe generates.

I have a glass bowl and I think that is what I will be using this yr...I need to invest in those oven gloves too for this recipe...lol
