Does anyone have a semi easy recipe for good frosting for cupcakes?

This is the recipe I use all the time for chocolate frosting...now that I think about it, I very rarely make white/vanilla frosting, so if you're needing that - hopefully someone else can help you!

If not, you might consider Food Network : Healthy Recipe Collections, Party Ideas, Quick & Easy Recipes, Cooking Videos or Epicurious.com: Recipes, Menus, Cooking Articles & Food Guides - they have great recipes resources and reviews on them, so you can read what other folks thought when they made the recipe. I find that invaluable!

4oz Semisweet Baking Chocolate
2oz Unsweetened Baking Chocolate
2 C Powdered Sugar
3/4 C Butter (room temp/softened)
1 tsp Pure Vanilla Extract

Melt the chocolate over a double boiler (glass bowl over some simmering water works just fine!). Remove from heat and allow to cool.

In a large bowl, with a hand mixer, beat sugar, butter and vanilla on low speed. Add the cooled chocolate and beat on high until light and fluffy.

This is the one I now use it came from a good friend whom uses it always

1 1/2 cups Shortening
2 Tablespoons Dream Whip

beat this together

Add:
1 bag Powdered Sugar
1/2 cup Water
1 Teaspoon Vanilla

Whip all together and you have yummy vanilla frosting. Sometimes I change it up and add Almond Extract to change it up. especially for Sugar Cookies.

Here's the recipe I use. It's so easy and so yummy. You can use different flavors of creamer or different extracts if you'd like.

1/2 C shortening
1/2 C soft butter
1 Tablespoon Vanilla
1/4-1/2 C French Vanilla Creamer (LIQUID. I use International Foods)
3-4 C (about 1 lb) confectioner's sugar Depends on how sweet you like it.

Cream the butter & shortening together. Add vanilla. Gradually add sugar. Beat, beat, beat. Add creamer. Beat, beat, beat. Add milk (if needed). Beat more. Should be light and fluffy.
Yields: 3 cups.

Rick's Special Buttercream Frosting - Allrecipes

This is a good recipe for frosting. I use at least half butter and have made it with milk instead of cream. I usually end up using more sugar, but you can change these things to taste. You can read the reviews and find other tips. You do have to beat and beat it but it is worth it! It is also really good with some almond extract in addition to or replacing the vanilla.

I don't use shortening in frosting, it leaves this slick feeling in my mouth that is just 'not good'. LOL I can always tell when folks have used shortening and not butter. Just depends on what you like and what you're used to...the reason buttercream is so good (and called buttercream) is because of 'butter'.
