ok...for 6 ingredients in a "cheesecake" this will definately W~O~W ya !!!
1 graham cracker crust
16 oz cream cheese
2 eggs
3/4 c sugar
2 tsp vanilla extract
1/2 tsp grated lemon zest
Preheat oven to 350.
Beat sof cream cheese slightly,then add eggs, sugar, vanilla, and lemon zest. Beat til light and fluffy.(I let my stand mixture do it about 12-15 min)
Pour into crust.
Bake til firm, about 25 min.
Let cool then top w/pie filling.
Refrigerate for at least 8 hours before serving.
*NOTE*
This is SOOOO easy to change up also....play with the extracts!!!
(Try raspberry extract,then dust w/cocoa

)
I also let this cool in the oven,open the door and let cool when time is up!
