Default Help! Dessert Dilema...

Today I am entertaining my neighbors and in-laws--a total of 10 people for dinner. We're serving bbq'd Kolby beef steaks (don't know how to spell Kolby--it's that new Japanese breed with the perfect marbling that's all the rage right now), steamed veggies, and corn on the cob. And I don't know what to make for dessert! Things are a touch tight financially for us right now, so I can't make a bunch of different special things (that's what I'd normally do to make sure to please everybody) but I have no idea what one thing to make.

Here's a little more info: FIL loves anything sweet. MIL isn't big on chocolate or rich things. SIL doesn't like rich/chocolate much, either. Not really sure what she does prefer, other than oatmeal cookies. Neighbors' kids are picky eaters who don't like a number of things, such as nuts and whipped cream.

I think they all like brownies either a lot or at least okay, so I may make a pan of brownies and something else. But I don't know what! I'm a pretty good baker... HELP! I need some ideas for a good bbq dessert. I also have chocolate chip ice cream on hand, if that helps!

Banana pudding! Cheap & easy using instant vanilla & banana pudding mixes.
Just layer the pudding, vanilla wafers, bananas...repeat.

I would think the brownies would be enough....you could fancy them up w/a scoop of the ice cream you already have and a drizzle of hot fudge.

That would be great!

Or you could make a batch of homemade choc chip cookies and make homemade ice cream sandwiches w/them and again the ice cream you have.

I recommend a plain vanilla or lemon sheet cake or bundt cake. You can leave it without frosting and make a fruit compote to use as a topping.
