Happy Kids PB&J Cupcakes w/PB Frosting

1 box yellow cake mix(non pudding added kind)
1 c creamy peanut butter
1/2 c jelly


Frosting:
1/3 c unsweetened cocoa powder
1/4 c margarine
2 c powdered sugar
4 Tbs milk
1/2 tsp vanilla extract
1/2 c creamy peanut butter


Line muffin pans w/paper liners.

Mix cake mix w/peanut butter.Beat at med speed til it looks like crumbs. Continue w/cake mix directions but LEAVE OUT the oil called for on box.

Spoon batter into muffin cups, filling each half full. Top each with 1 tsp jelly. Add enough batter to cover jelly, filling each cup to 3/4 full.

Bake 350 for 20 min,til cakes spring back when lightly touched. Cool in pan on wire rack for 10 minutes. Frost if desired.

FROSTING:
Put cocoa and margarine in large bowl. Using a mixer at medium speed, beat cocoa and margarine til smooth. Gradually beat in sugar, alternating with milk and vanilla. Beat in peanut butter til frosting is fluffy.

*Makes about 24 cupcakes*

This looks fabulous. Bob will love it and he was just asking for cupcakes today! I will try to make them tomorrow.

I made these this afternoon. They are really good. After I got started I realized I only had 6 cupcake papers so I made those and then a small 8 inch cake. I haven't tried the cake, yet, but the cupcakes are great. Next time, I don't think I'll frost them. The frosting is EXCELLENT, but the cakes were fine on their own and it would be less sugar in my little guys' systems, lol.
