I buy fresh veggies and cut them up. Then I either portion them or freeze them all in one bag. Since I use a lot of veggies when I cook, I find it is insanely more convenient than chopping them every time. Some things I already prep are:
Bell pepper
Onions
Yams
Carrots
Are there any other veggies that freeze well? I know that stores carry an assortment of frozen veggies but I like to buy them fresh and I am not sure how anything else does in the freezer. TIA!

Hmmm interesting...I've never thought to do this! So raw peppers, onions, yams/ sweet potatoes and carrots all freeze well without any blanching first?

I freeze onions, peppers and herbs without blanching.
I blanch and freeze:
corn (on and off the cob)
brocolli
cauliflower
green and yellow beans
spinich
peas
carrots
asparagus
zucchini
tomatoes and celery (for chili)
tomatoes as sauce
salsa
cucumbers as freezer pickles
and this year I'm going to try to freeze swiss chard.
