Default Creamy Wild Rice Soup

This is not frugal, but is so awesome!! And it's a great thing to have in the freezer in individual serving containers to pop in the microwave.

6 TBS butter
1 TBS minced onion
½ C flour
3 C chicken broth
2 C cooked wild rice (Wild rice takes a long time to cook…have this done before doing the rest.)
1/3 C minced ham
½ C grated carrots (I like it better with baby carrots cut into coins)
3 TBS slivered almonds
½ tsp salt
½ C Half & Half

Melt butter in sauce pan, sauté onions until tender. Blend in flour, gradually add broth. Cook stirring constantly until mixture comes to a boil. Boil 1 minute. Stir in rice, ham, carrots, almonds, and salt. Simmer 5 minutes. Blend in Half & Half. Heat to serving temperature. Makes 6 cups. ***KEEP WATCHING AND STIRRING THIS AS IT CAN BURN EASILY!!***

Sounds wonderful, but I'm the only one in the house that would eat it. Glad to see it posted under freezer friendly.

Sounds wonderful and I agree I probably would be the only one to eat it. I have never thought of freezing individual servings of soups- great idea, thanks

I have no had much luck with freezing this with the half and half in it. when I make it I only put H& H in a portion of it and then freeze portion without the H&H. I save the H&H part for when I reheat.

Is this the same as Byerly's Wild Rice Soup? It sure sounds like it ~ and that stuff IS really yummy!

I think so, that's the one I use. even the girls love it. that makes it a miracle food.
