I just hit a huge sale and have quite a few packages of different flavoured grated cheeses. I've frozen cheese with my freezer casseroles before but I've never just frozen a bag or packages of cheese so I have a few questions!

I know that I can freeze cheese for up to 6 months from the date it's placed in the freezer. The bags of cheese I bought all have a BBD of October 2009. Can I leave the cheese in my fridge (using whatever I need) and then as I get closer to the BBD put whatever packages we haven't used in the freezer and start my 6 months then?

The reason I'm asking this is we eat a TON of cheese and frankly I'd love to go back to the store and buy out the flavours we like. I wouldn't have to worry about cheese until the spring at least if I do this but if my idea is gross or whatever tell me LOL!

I've frozen packaged cheese many times and never had a problem. You just let it thaw out in the fridge and it's the same as if it was never frozen!

You don't have to keep the cheese in your fridge until october to then move it to the freezer. Just buy it and pop it in the freezer. If some are in the freezer a little more than 6 months, it won't make a difference. Just wrap them up well for longer-term storage to avoid freezer burn.

Double bagging can help. I've put bags of shredded cheese in ziploc bags and then frozen them.

I often use frozen shredded cheese without even defrosting it. In quesadillas, on casseroles, etc., it melts pretty quickly.

Thanks! I really like the fact that I can leave it in the original package and then just pop that into a freezer bag! Very convenient!

I am always freezing the bags of cheese! I don't even put them in an extra freezer bag~right from the store to my freezer. I stock up when it goes on sale. I have never had trouble with freezer burn or with it tasting like it was frozen. I, too, have used it in casseroles, etcl. straight from the freezer!

I wouldn't open and use until October and then freeze it. Too much chance of bacteria and such. Just freeze most of it and keep some of it out. It thaws so quickly! We just had 4 cup bags go on sale for $1 a piece! A big deal for me!

I also freeze shredded cheese all the time with no problems. I also freeze american cheese. I buy the big container at Costco, leave one pack (of about 20 slices) in the frig and freeze the rest.
