1 lb. Breakfast Sausage (cooked and drained)

Misc. cubed meats (leftover ham, hamburger, turkey, bacon, etc.)

6-8 eggs (Scrambled)

1 can Rotel

20 Flour Tortillas

Shredded Cheddar Cheese

** You can also add onion, green pepper, etc. I try to use up anything from the week, when I make these. I have also added leftover roast, hot dogs, etc.

I do an assembly line. Mix eggs, sausage, rotel and cheese together, and roll into flour tortillas. I then, wrap each individually with saran-wrap, and freeze.

These are so easy to pop out of the freezer and into the microwave (45 seconds each) for breakfast!

I don't mean to sound dumb, but what is rotel?
How do the eggs turn out when you freeze and reheat them. I wanted to make some of these before so we just did a test egg. We scrambled one eggs and then put it in the freezer. The next morning we took it out and reheated it. It went kinda weird. Is there a secret with freezing cooked eggs? Do you under cook the eggs so it can cook more when you reheat it?

Hey!

Rotel is diced green chilie's and tomatoes. Here is a picture I found of it....


I have never had a problem with the eggs. Maybe because there is other stuff mixed in with it, I just haven't noticed. I'm really not an "egg" person, so I tend to put more meat and veggies in mine.

Sounds good, Im gonna try it sometime.. I don't know how many mornings I want a burrito but I don't have the time to make it. there too expensive to buy in the stores. Thank you.
