I'm going to a meal exchange and I can't think of what to bring. I'd like to bring something that isn't too expensive to make. I was thinking maybe I'd just cut back on the meat a little. And it needs to freeze well and have family friendly ingredients. Any ideas??

I was contemplating tortilla chicken soup but then I feel like I should include sour cream, cheese, and tortilla chips and those all add up and don't keep well opened.

TIA

Just curious, but what is a "meal exchange"?

Thanks. I had looked through some of those recipes.

The way we're doing the meal exchange is that every one brings 4 freezer friendly meals and then we switch. So everyone goes home w/ four different freezer meals. We did it once before and it was great to have those meals on hand. Plus we make the exchange a bit of a party

What about meatball subs. They are super easy and cheap to make. It is one of our favorites.

Thanks for the site. I'll check it out. There's five of us who get together for a Bible study and every so often we'll do a meal exchange. We each bring 4 freezer friendly meals and then swap. So last time I made 4 potato casseroles that Blessedwith6 posted and in turn I received chili, burritos, green bean casserole, and stuffed shells. Some of the girls also throw in side dishes or desserts that can be frozen. We all include directions for thawing if necessary and baking. Sometimes we include the recipe.

We do once a month cooking and here is a REALLY easy recipe that tastes wonderful:

Cranberry Chicken

1/2 bottle of french dressing
1 envelope onion soup mix
1 can whole berry cranberry sauce
4 boneless, skinless chicken breasts

mix the first three ingredients, put chicken in a ziploc bag (it can still be frozen if you'd like), pour sauce mixture over & freeze. To cook: Thaw and pour all ingredients in a 9/13 pan, cook on a preheated 350 degree oven for approximately 45 minutes. Serve with green beans and stuffing. Add orange zest to the sauce for additional flavor. This is great!!!!!!!
