I toss the shredded zucchini into winter soups and stews and yes even spaghetti sauce.
Will have to remember chocolate zucchini cake.
Very interested for tips on breading sticks then freezing

I freeze zucchini every year this way and then we have great breads and cakes all year long!! I leave the extra liquid on as well. Yummy, yummy!!!!!

my mom also used to make the batter for the bread and freeze that. My friends mom used to make mini bread loaves and freeze them and when thawed they taste like fresh; frozen pumpkin bread tastes really good too!

i had zucchinni coming out my ears and that's what i did i baked until i got tired of it and then shredded it and froze, it will be good to have some zucchinni bread come january

What do you shred them with? A cheese grater? I've got several zuchinni to use....

I peel it then shredit using a cheese grater. I usually freeze it w/ 2 cups per bag (usually the amount my recipe uses). I just unthaw it when ready to use & dump it in, juice & all! Works fine for me!

I shredded it & put it in the freezer in measured amounts for Zbread. Then, the freezer defrosted & we had TONS of meat & stuff to deal with. We made chili w/ a bunch of thawed ground beef, ground venison and ground chicken, and I threw the grated Z in the chili - worked great.
