Question Any success with freezing shredded zucchini?

What kind of success have you had with freezing shredded zucchini? Our garden is going crazy and I'd like to put some up to make breads/cakes around the holidays. Do you have to alter the recipes in anyway if using frozen zucchini? I love the stuff but it gets old when you have it over and over again. I think my neighbors are tiring of it too.

you can absolutely freeze zucchini.........just shread and freeze......you can do measured amounts then thaw to make zucchini bread or whatever.


You can also do a bread coating on zucchini sticks.......lay them on a cookies sheet-cover w/waxed paper and let freeze then bag them!!!

You can also use a dehydrator if you have one!!!!!

ooooooops....about altering the recipes.......NO.......when you thaw it..there will be some juice in the bag......I throw that into the recipe as well.

Yes, we do this all the time for chocolate zucchini cakes. We freeze in sandwhich bags. It lasts a long time in the deep freeze and works great in the cakes.

I did this too with no problems! Just shredd and freeze.

Just as a side note you could make the muffins/bread and then freeze so you could the bread when you want it. I usually make muffins or mini loaves of zucchini bread and freeze. Always nice to have if you have an unexpected guest

Well, I did it and it worked out fabulous!! There was some liquid in the bag when I dumped the zucchini in the recipe, but I just added it in too. I was scared I had made the batter too runny but it cooked up perfectly. Thank you everyone! Now we can have fresh zucchini bread all year long! I'm gonna have to search the site for some other zucchini recipes soon.

You do this when they are raw? Does the coating fall off when in the bag? I'm loving this idea!
