Just to let you guys know, this is my FAVORITE meatloaf recipe. It is so moist and yummy, not to mention very tasty!

Versitile Meat Loaf/Meatball Recipe

Individual Meatloaves

1 egg
3/4 cup milk
1/2 cup quick-cooking oats
1/2 cup chopped onion
1 tablespoon brown sugar
1 teaspoon salt
1 pound lean ground beef

******Topping*****
2/3 cup ketchup
1/2 cup packed brown sugar
1 1/2 teaspoons prepared mustard

In a bowl, beat the egg and milk. Stir in oats, onion and salt & 1 tablespoon brown sugar. Add beef and mix well. Shape into eight loaves; place in a greased 13-in x 9-in x 2in. baking dish. Combine topping ingredients: ketchup, brown sugar and mustard; spoon over loaves. Bake, uncovered, at 350* for 45 minutes or until the meat is no longer pink.

Regular Size Meatloaf

Use same recipe, just do not divide meat. Use regular pan and same cooking time.


Meatballs
***************

Use this modified recipe:

1 egg
1/2 cup milk
3/4 cup quick-cooking oats
1/2 cup chopped onion small dice
1 tablespoon brown sugar
1 teaspoon salt
1 pound lean ground beef

Mix all ingredients above and roll into 1 1/2 inch balls. Bake @ 350* for 20-30 minutes. Test for doneness after 20 minutes. Makes about 3 dozen
meatballs.

Italian variation: Add 1 teaspoon Italian seasoning, garlic powder and parmesan cheese to the mix. Use these meatballs with spaghetti or meatball sandwiches;

Over noodles, add a can of cream of mushroom soup to the cooked meatballs, heat through serve over egg noodles;

As an appetizer: Add equal portions of grape jelly and bbq sauce, simmer until melted together. Add meatballs. Serve with toothpicks.

Or....Add them to veggie soup. The possibilities are endless here.......

These recipes are also great to freeze since it's easily doubled or tripled.
