I have some potatoes that are about to go bad. We will be leaving for the weekend Thursday afternoon. I do not want to come home to hairy green stinky potatoes. How can I cook them up now and freeze them for use later?? I have never frozen potatoes so I dont know if it can be done. Thanks.

I would dice them up like for hash browns (or shred) or else cut them into strips for fries and cook them partiallly. Then lay them out on a cookie sheet to freeze and once frozen dump them into a freezer bag. You can also freeze mashed potatoes, I do that w/ leftovers sometimes.

I found out the hard way NOT to freeze them uncooked - it was a yucky brown, discolored mess!

lovemy2 boys........... ............I can pretty much imagine what they looked like...I tried making big batches of scalloped potatoes and ham one time....THE NIGHT BEFORE......you should have seen what THAT looked like.........some mistakes ya only make once

You're right, M2M. I won't make that mistake again.

I chopped up way too many potatoes, carrots and onions to put into the crock with a roast, so I added what I could fit in there and then divided what was left into 2 freezer bags and froze them uncooked - thinking it would save me some time later for the next roast. WRONG!! The potatoes did come out brown/black, so I ended up wasting a few potatoes total, but I cooked the carrots and onions and they were fine.

Thanks for this post. I was just about to ask about this.

I wondered if there was some way that I could freeze raw potatoes - maybe add some lemon juice-water to them??
Or is there just no good way to freeze them raw?

Bummer. I thought I was being smart and saving myself some time!! lol
