Ok...I will start this forum with an easy one.

Lasagna

I always make a few extra when I make it since it is so messy and time consuming. Just layer them up and instead of popping them in the oven, press plastic wrap onto the top of the lasagna and wrap with two layers of heavy duty aluminum foil. Don't forget the plastic wrap because the acid in the tomato sauce will eat through the foil if you don't.

We put them in deep dish pie plates since there are only 4 people here and it is the perfect amount for us.

If you make a really big pan for dinner one night you can also portion the leftovers into meal sized portions and freeze them as well. Just pop them in the microwave after thawing out for a quick meal.
