We just went to Sam's club last week, so I stocked up on lots of stuff, some premade some not. Quick run down of what I have now.

2-whole chickens
20 lbs of chicken breasts
10 lbs each of salmon, tilipia and chicken nuggets
8 lbs of french fries
20 cups of shredded cheese-seperated it into about 6 bags and froze them.
2 dozen breakfast hot pockets
18 hot pockets-pepporoni pizza

I REALLY need to make up some batches of spagetti, chili, etc. I dont have enough full meals on hand like I would like.

Oh yeah. I also made up a dozen breakfast burritos-scrambled eggs, hashbrowns, cheese and crumbled up bacon.

Once I get everything reorganized, I really need to have a weekend of preparing meals to freeze for later.

Well I nixed the mac n cheese. I have yet to find a really good recipe. Here are the recipes for the other two.

Cheesy Hash Brown Potatoes

1 pkg (32 oz) Hash Brown Potatoes (squares)
2 cans Cream of Potato Soup
8 oz Sour Cream
2 Cups shredded cheddar cheese

Combine all ingredients. Press into casserole dish. Bake at 350 approximately 1 hour.


Ham and cheese omelet muffins

Eggs
Half and Half (or 2% milk)
Diced ham
Shredded cheese
Diced onions, green peppers, etc. optional ingredients
Salt and pepper

Combine h/h and eggs as if you were preparing an omelet or scrambled eggs. Sprinkle in salt and pepper. Place ham and cheese, about a Tbsp of each, (and optional filling) in a greased large (6)muffin pan. (perfect portion size) Pour egg mixture over filling about 2/3 full. Stir gently with a fork just to help lift and distribute filling. Bake at 350 until set…30 minutes or so. Cool then flash freeze and freeze with foodsaver.

*If you’re doing this for a meal right away, not for freezing in portion sizes, you can make this in a loaf pan then serve in slices.

Yes the Amish Bread starters freeze well. They stay mushy - just so you know....

Sorry this took so long.

Poppy Chicken Casserole
4-6 Chicken Breast, boiled, cut into bite size pieces( I have done this with raw diced chicken breast and just cook it longer) Turns out just fine.
1 can cream of celery soup
1 can of cream of chicken soup
1 cup sour cream Salt and Pepper
Mix together

Small bag Slivered almonds
1/2 tablespoon poppy seeds
1 roll Ritz crackers crushed
1 stick margarine-melted
mix and spread on top

bake 350 degrees 40 min.

***sometimes I also add broccoli florets to this also.

Our big freezer is stocked with "freezer meals" like casseroles, hot dishes, home made pancakes, waffles, cookies, pulled pork, homemade pasta dishes, taco meat, spag. sauce with meat, french fries, chicken breasts, chicken thighs, ground venison, ground turkey, TONS of fresh/frozen fruits and veggies (corn, carrots, green beans, diced onions, strawberries, raspberries, peaches, apple sauce, blueberries, pears) we also have a bunch of frozen chickens, a frozen turkey and a ham. Yes, it's a big freezer. We have a smaller freezer in our pantry room with a few "freezer meals", some ice cream and frozen treats and some frozen pies.

At the moment not much. I do have some leftover chil in there. Other than that just some meat and frozen veggies. I need to stock up and do some batch cooking. I really miss my extra freezer.

A couple of hams, 4 whole chickens, several packs of venison from last season, a duck, 6 packs of bacon, 5 pounds of sausage, 10 pounds of kielbasa, 4 beef roasts, 15 pounds of cooked hamburger, 3 meatloafs, 2 lasangas, 3 pies, 5 loaves of bread, 3 bags of raviolis, 1 bag of rolls, 9 ears of corn, oh and 2 pork roasts.
