I always have a few things on hand in the freezer for quick meals after a busy day.

Chili...I make big pots and throw leftovers in gallon size Ziploc bags, enough for 4 portions, lay them flat and freeze them that way. It is easy to store in you freezer and they stack nicely. The best part is you don't even have to thaw it out, just peel the bag away from the frozen chili and break into pieces into your pot, heat and serve.

Spaghetti Sauce...We make huge batches of our own sauce and portion, store, and heat like we do chili.

Crab meat stuffing...when I make a batch for stuffed mushrooms I make extra and freeze in quart Ziploc freezer bags to use for stuffed chicken breast or pork chops later on.

Pre-pattied hamburgers

Cooked ground beef, Italian sausage, or Cooked and crumbled bacon portioned into small bags for homemade pizza toppings. I also keep pepperoni in the freezer to pull out for pizza, calzones, or stromboli.

my freezer is stocked with pasta sauce, chilli, fish fillets, Shephards Pie and cottage Pie, (all made from scratch) frozen berries for desert

In the winter there is usually some form of beef and or chicken casserole, soups,

I keep a few lbs of minced beef and lamb, chicken breasts, frozen veg, to help out when time is short

Sure Heather...but only if annemc posts hers for shepherds pie and cottage pie.:D

Crabmeat Stuffing

Chop onions and celery very fine, I use a food processor or electric chopper, and if you are making stuffed mushrooms chop the stems of the mushrooms and add them to it. Saute in butter or margarine and add bread crumbs and crabmeat until it is a...well...stuffing like consistency. You can also add a little salt and pepper for seasoning.

Sometimes we use real crabmeat and sometimes we use the fake crabmeat, it just depends on what I have around.

Use this to stuff mushroom caps and broil until brown or stuff chicken breasts and bake...really you can stuff anything with it.

I have an assortment of foods stocked in the freezer...I like to double or triple a recipe that is freezable when I'm cooking...
chili w/ corn muffins in a seperate bag
Ham & Pasta casserole (kid friendly!)
pizza dough
lasagna, stuffed shells
homemade spagetti sauce
salsa starters portioned out in seperate bags...
freezer jam
Chimichangas
Enchiladas
homemade ice cream
Cookie dough ( for those cravings while watching tv at night w/ my dh)
oh, I buy cheese in large quantities and stred it to place in quart size bags. I pull the bags out as I need some. Prevents wasting it and is cheaper in large quantities...
The stock just fluctuates as I make different foods...

Can you freeze lunchmeat?
all my dd will eat for school lunch is sandwiches and we have some good deals on lunchmeat once in awhile

ok you ladies who do the dinners - lasagna and chili and such. I have tried doing lasagna and ziti but when they thaw out they never taste right. What are you doing that I am not.

I would love to make both of these esp now that I am working. I could make single serves to take with me. HELP

Personally, when I do freeze pasta, I think that it tastes better when it has a lot more sauce than normal.

Right now, I have
Ham and Beans (lots of that),
Homemade hot pockets for dh to take for lunch.
Chicken CorDon Bleu (prepackaged - got cheap)
leftover casserole,
frozen pizzas
cookies,
Amish Friendship Bread Starters

On cool days I try to cook a whole bunch so that on the hot summer days I don't have to cook or when I am too frazzled

My freezer is looking pretty empty so I should get busy.

I should say that my DH's family are farmers and have cattle so a couple of times a yr we get together and package the meat - we get it back from the butcher in quarters. So we get free Hamburger, Roasts, steaks and stuff which really helps with our grocery bill!
