1/2 c sugar
1 1/2 tsp cornstarch
1/4 c cider vinegar
1/4 c water
3 c beets, cooked and cubed
2 Tbs butter


Mix-sugar, cornstarch, vinegar and water in a pot and boil 5 minutes, stirring often.
Add the beets, toss to coat.
If freezing-put each batch in a quart size bag or freezer container, and make a note to add 2 Tbs butter when reheating.
If eating them now-Let stand 30-40 min.
Just before serving,add butter and reheat to boiling.
