Default Homemade "ice cream" sandwiches

Ingredients:
Chocolate graham crackers
Cool Whip or any other brand whipped topping

I break the graham crackers in half so they're squares instead of rectangles. But either way will work. Break them down further to make minis if you want. Spoon a nice blob of Cool Whip and top with another graham cracker. Freeze them in a container if you're not going to eat them right away so they'll stay fresh. Otherwise they don't take long to freeze and you can have a cool little treat in about 30 minutes.

The Cool Whip sort of solidifies into this tender icecreamlike substance. It's definitely less calories than a real ice cream sandwich, especially when using the Lite variety.

I put Cool Whip between 2 Chips Ahoys and froze them for dessert tonight. Yum.

Thanks for the idea. I didn't have chocolate graham crackers so I used regular and I had a banana that need to be eaten so I put a couple slices on the graham cracker w/ the cool whip. That was good! It was almost like a frozen banana cream pie!

I forgot I even made this post. I tried the regular grahams with banana, as mentioned by Bsteen, and they were awesome. I've also done 2 Chips Ahoys with Coolwhip frozen and they were great too.

Another way to "pretty them up" is to put nonpareils on the whipped cream after the sandwich is made, but before putting them in the freezer.
