Hi ladies, I have not posted in awhile just due to time constraints but I have been doing this cook ahead meals by myself since my oldest ds was born. I don't join up with friends because a lot of them don't like to cook like I do and also dh is picky about eating other peoples food. Any way I found two great cookbooks in the library that give you step by step directions about making and freezing the meals all the recipes are about making ahead first one is Super Suppers Cookbook and the second is Dream Dinners (I actually like this one the best they even have ideas for bkfast) Maybe these will come in handy. I love to cook but would rather do the bulk of it at one time.

I'm not actually in a club or anything, but this is something we make 2 pans at a time and freeze. Maybe it will work for you.

Baked spaghetti

1 lb. ground beef
1 lb. spaghetti
1 large jar spaghetti sauce
2 cans cheddar cheese soup
mozzarella cheese

Boil spaghetti. Divide and put in 2 9x13 pans.

Brown ground beef. Add sauce and soup.

Put mozzarella cheese on top of spaghetti. Cover with sauce mixture. Bake at 350 degrees until sauce is bubbly (about 25 min if not frozen) or cover and freeze.

A book that I learned about in the local newspaper is "Cooking among friends". They also have a website with receipes on it. My husband loves the ones I have picked out and that is hard to do for him. They also reheat well for lunches and dinners on the go.

We don't do a dinner swap, but when I can I cook double and freeze 1/2
ex,
ground beef....great for super fast spagetti, pizza topping, omlet filling, etc

pancakes, I usually cook an extra 20 or so pancakes(chocolate chip), then I freeze them on a cookie sheet, once frozen I place in a freezer bag

casseroles, meatloaf, even soups

....why do I never seem to have anything to eat?
