I am part of a frozen dinner club...there are 5 of us and we all make 2 different frozen meals for each person!! Here are a few of the recipes we have used...I would love to get some new recipes!!! We have been doing this for almost a year and I'm running out of ideas!! Hope you enjoy these!!!

Artichoke Chicken Bake 6 servings
¼ cup butter or margarine
6 boneless, skinless chicken breasts
1 cup onion, chopped
1 garlic clove minced
2 tablespoons flour
¼ teaspoon salt
1 ¼ cup dry white wine (or apple juice)
1 cup canned reduced-fat chicken broth
1 (3 oz) package fat-free cream cheese
1 (14 oz) can artichoke hearts, drained and halved (not marinated artichoke hearts)
For serving day you will need:
½ cup sliced almonds (to be added at serving time)
2 tablespoons parsley
Advanced Prep: Cook chicken in stockpot. Remember to keep these six chicken pieces whole after cooking (don’t cut or shred). Chop onion. Mince garlic.
Preparation: Melt butter in large skillet over medium heat. Saute onion and garlic until tender. Stir in flour and salt until smooth. Cook 1 minute, stirring constantly. Add wine (or juice) and broth; cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add cream cheese, stirring until cheese melts Remove from heat; set aside. Place chicken breasts in 2-quart casserole dish; arrange artichoke hearts over chicken. Spoon cream cheese mixture over chicken and artichokes. Cover label and freeze.
To serve: Thaw. Bake uncovered at 350 degrees for 35 minutes or until bubbly. Sprinkle with almonds and parsley.

Bacon Wrapped Chicken 12 boneless chicken breasts
2 cartons (8 oz.) whipped cream cheese with onion and chives
2 T. butter
Salt to taste
12 bacon strips
Flatten chicken to 1/2 in. thick. Spread 3 T. cream cheese over each. Dot with butter and sprinkle with salt; roll up. Wrap each with a bacon strip.
Freeze uncooked.
To cook: Thaw overnight in fridge. Place seam side down in a greased pan. Bake, uncovered at 400 for 35-40 min. or until juices run clear. Broil 6 inches from the heat for 5 minutes or until bacon is crisp.

Cool Lime burritos8 Servings
1 teaspoon grated lime peel
1/3 cup lime juice
2 tablespoons white vinegar
1 tablespoon honey
2 teaspoons Dijon mustard
1 teaspoon cumin
2 garlic cloves, minced
2 tablespoons canned green chilies
1 (10 oz) package frozen corn kernels
1 (15 oz) can red kidney beans, drained and rinsed
½ cup sliced green onions
1 medium cucumber, peeled, seeded and diced
2 tablespoons minced cilantro
8 flour tortillas (for serving day)
Advance Prep: Drain and rinse kidney beans.
Preparation: In a glass bowl, combine lime peel, lime juice, vinegar, honey, mustard, cumin, garlic and chilies. Pour into large freezer bag. Add corn, beans, onions, cucumber and cilantro. Seal bag; rotate to mix vegetables. Place vegetable mixture bag and tortilla bag into a larger bag.
To serve: Thaw. Stir to recombine. Drain marinade off vegetable mixture. Discard marinade. Warm tortillas slightly (the filling won’t be warmed). Divide mixture between tortillas. Roll to enclose filling.


Lemon Parsley Marinade
1/4 c. chopped fresh parsley
1/2 c. chicken broth
1/2 c. lemon juice
4 lemon slices, halved
1/4 tsp. pepper
3 Tbsp. vegetable oil
Chicken (this will marinade up to 2 1/2 - 3 lbs.)
Directions for Cooking Day: Place chicken pieces in freezer bag. Combine all marinade ingredients and pour over chicken. Freeze.
Directions for Serving Day: Completely thaw chicken and marinade. Cook on grill.

Super Burgers 1 1/2 lb. ground beef
1/2 - 3/4 cup chopped onion
1/2 - 3/4 cup chopped green pepper
garlic, salt and pepper to taste
Directions for Cooking Day: Combine all ingredients and shape into hamburger patties. You will freeze these raw and cook them on serving day.
Directions for Serving Day: Defrost patties and cook on grill or pan fry.

thank you so much! We started a frozen supper club in September and I already feel like I am running out of ideas. This month we are doing a moneysavers one where we are doing a competition to see who can make the cheapest recipe. It should be fun. I will try to list some of our recipes soon.

Thats a really good idea to do a moneysavers competition! You will have to let me know how that turns out!! Can't wait to see more recipes...I have TONS of them so can post more!!

It's so funny to have found this post b/c I go back to work soon and thought what a great idea this would be to do! Can you tell me a little more about hoe you and your group work it out? I was thinking i would gather 5 co-workers and have everyone make 5 of the same dish each that way we have 5 dinners come Monday. But how do you keep costs fair? I thought of having five genres of food chicken, beef, fish, pasta, vegetarian or something like that and having each person rotate weekly/ How do you guys do it? Thanks for any info!

Here is the original email I sent out the group. I hope it helps! Let me know if you have more questions!

Hi girls,


We will be making 2 different entrees for each person in the group. That means, if you want one for your family, you would make 2 entrees 5 times. Since most of the people in this group have at least 4 people in them, let's try and make the meal enough for 4 people.
Will try and meet 1 time a month at someones house for an evening. Who evers house it is at, they will have a dessert and drinks....a good time to get out and have some "girl time". We won't actually be making the entrees at the house, just swapping dinners there. So everything should be made ahead of time.
Always be honest. If someone made something that was just not good, make sure and tell them so they know that type of meal does not work well freezing and thawing.
Try and spend at least $25 per meal. That means, for 1 entree that you make 5 times, you would need to spend at least a TOTAL of $25. (NOT $25 per meal per family.) So when you make the 2 meals for the month, you would spend at least $50. If the entree you want to make is significantly less than that, then include some kind of side dish or dessert. (You don't have to sit and figure out the amount, just be aware of the estimated cost. You don't want 1 person spending $10 and another spending $30.)
Always place the meals in a freezer zip lock bag and put the name of the recipe and the date on the bag. If it should be cooked in say a 2 quart dish, then put it in a throw away 2 quart container and put in a freezer zip lock bag.
If you want, include the recipe so people can cook and freeze it again on their own if they like it!!

If you are interested, let me know if you or anyone in your family has any allergy's to any foods or any foods that are just out of the question for you to try/eat. 1 thing I have really liked about this is that I have tried things I never even thought of having for dinner!! I've been part of a food swap for about a year now. The gal who organized us started a blog, Busy Moms Dinner Club for us to communicate, add cooking instructions, etc. The first couple of posts (Jan 2007) were guidelines that we've held to quite well.

Last month we ended up with 4 red-sauce pasta dishes, so we put a limit on how may we could have this month. The blog is also helpful, because everyone updates what they're bringing.
